Vegan Cauliflower Bisque Recipe
I love making soup and this one 🥰was a favorite with *everyone* in the family, (which isn’t always the case at dinner time - ya know what I’m sayin’?!) so I thought I’d share it with you.
I usually make it with broccoli 🥦but I changed it up and used cauliflower this time which I might like even better! 🙌😋
Ingredients:
5 cups water or Vegetable Stock
3 1/2 cups cauliflower florets
1 onion, chopped
1 cup cashews, roasted (I roast raw cashews in a pan over low heat until they’re slightly toasted)
1/2 cup celery, sliced
1 Tablespoon garlic, minced
2 teaspoons sea salt
1 teaspoon fresh dill (or 1/2 teaspoon dried)
1 Tablespoon Nutritional Yeast
Pinch crushed red pepper flakes
Black pepper to taste (I added Young Living Black Pepper Vitality essential oil - one drop is plenty & tasty )
Instructions:
Add water or stock, cauliflower, onion, celery, and garlic to a pot and cook 20 min or until tender.
Remove from heat, add to blender (I use a Vita-Mix) with cashews. Blend in two batches until smooth and creamy.
Return to pan and stir in remaining ingredients.
Garnish with fresh dill 🌱& serve with your favorite bread 🥖& butter.
