Vegan Oatmeal Chocolate Chip Cookie [Recipe]

This is our family favorite, Vegan Oatmeal Chocolate Chip Cookie recipe that we like to add Peppermint Vitality oil to.

INGREDIENTS:

DRY

  • 2 C Spelt flour 

  • 1 C Vegan chocolate chips

  • 1 C Walnuts, chopped 

  • 3/4 C Rolled oats

  • 1/2 tsp Sea salt

  • 3/4 tsp Baking soda

  • 1/8 tsp Cinnamon powder 

  • Pinch Nutmeg, ground 

WET

  • 2/3 C Maple syrup

  • 2/3 C Safflower oil

  • 2 Tbsp. Filtered Water 

  • 1 tsp of Vanilla extract AND/OR 3 Drops Young Living Peppermint  Vitality oil 

DIRECTIONS:

  1. Preheat oven to 350°

  2. Place DRY ingredients in a large mixing bowl and mix well

  3. Combine WET ingredients in another large bowl

  4. Add WET to DRY and mix well

  5. Refrigerate for 15 minutes

  6. Place 8 scoops on a well oiled or parchment paper lined baking sheet and flatten slightly with hand. Space evenly so cookies have room to spread

  7. Bake until golden brown, approximately 10 minutes

  8. Enjoy!
