Sweet Potato Lentil Soup [Recipe]
I love soup anytime, and it’s perfect for this June gloom weather here on the coast. ️
I shared in my stories about this lentil soup I made over the weekend and some of you asked for the recipe, so here you go!
Sweet Potato Lentil Soup
1 cup lentils, rinsed
1 medium yam, peeled and chopped
1 orange or red bell pepper, chopped
2 carrots, chopped
2 stalks celery, sliced
2 cloves garlic, minced
1 can diced tomatoes
1 teaspoon Himalayan salt (add more salt after cooking to taste)
1/2 teaspoon turmeric powder
1/2 teaspoon cumin powder
1/4 teaspoon ground black pepper
1/4 teaspoon onion powder
1/8 teaspoon coriander powder
2 bay leaves
Dash cayenne pepper powder
4 cups of water
In the Instant Pot:
Add all ingredients, stir, seal lid and press “soup” button.
In a regular pot:
Sauté celery, bell pepper and garlic in a little olive oil then add remaining ingredients. Bring to a boil, then simmer for 35-40 minutes, stirring occasionally, until lentils are tender.
Serve with a green salad, and brown rice or your favorite bread. 🥖
